Mmm, waffles for breakfast is not a bad start to the day! Maybe something for the weekend breakfast, when there might be some extra time to treat yourself. I made waffles, using banana, gluten-free flour and baobab powder. Baobab is rich in vitamin C, fibre and antioxidants. It has a citrus flavor with hints of vanilla and caramel.
Gluten-Free Waffles with Baobab
about 5 small
1 banana
2 dl water (3/4 cup + 1 tbsp)
1.5 dl oat flour, gf (2/3 cup)
1 dl gluten-free flour (½ cup)
0.5 tbsp coconut sugar
2 tsp baobab powder
0.5 tsp baking powder
1/4 tsp salt
coconut oil for the waffle iron
Mix all the ingredients in a food processor. Heat a waffle
iron and brush with coconut oil. Pour batter onto hot waffle iron. Cook until
golden brown. Serve with whipped coconut milk and berries.
Glutenfria Våfflor med Baobab
ca 5 små
1 banan
2 dl vatten
1,5 dl havremjöl, gf
1 dl glutenfritt mjöl
0,5 msk kokossocker
2 tsk baobabpulver
0,5 tsk bakpulver
1/4 tsk salt
kokosolja för våffeljärnet
Blanda alla ingredienser i en matberedare. Värm ett
våffeljärn och pensla med kokosolja. Häll smeten på det heta våffeljärnet. Grädda
tills de är gyllenbruna. Servera med t.ex vispad kokosmjölk och bär.
