Gingerbread spiced Quinoa-Black Bean "Meatballs"

Vegetariska köttbullar med smak av pepparkaka, kunde det vara något till julbordet. Ja, absolut. De blev goda. Jag hade rester av både quinoa och bönor i frysen så jag använde dem och de var lite frusna när jag mixade dem så jag behövde inget bindemedel. Men om blandningen är lös kan man tillsätta mandelmjöl/ströbröd/havregryn.

Vegetarian meatballs with flavor of gingerbread, could it be something for the Christmas dinner. Yes, absolutely. They were really good. I had leftovers of both quinoa and beans in the freezer so I used them and they were a little frozen when I mixed them so I did not need a binder. However, if the mixture is loose, you can add almond flour / bread crumbs / oatmeal.


Gingerbread spiced Quinoa-Black Bean "Meatballs"

2 dl quinoa, cooked (3/4 cup +1 tbsp)
2 dl black beans, cooked (3/4 cup +1 tbsp)
1 small red onion, grated
1-2 tsp gingerbread spice
salt
pepper

Mix all the ingredients together with a hand blender. Season after taste. Fry in a pan with coocnut oil until the balls are cooked through, approx. 5-7 minutes.


Pepparkakskryddade Quinoa-Svarta Bönor "köttbullar"

2 dl quinoa, kokt
2 dl svarta bönor, kokta
1 liten rödlök, riven
1-2 tsk pepparkakskrydda
salt
peppar

Blanda alla ingredienser tillsammans med en stavmixer. Krydda efter smak. Stek i en stekpanna med kokosolja tills bollarna är genomstekta, ca 5-7 minuter.
