Jag hade både aubergine och överblivna kokta röda linser hemma som jag ville använda bort, så då slog det mig att kanske jag kan göra biffar av dem. Ja, biffar blev det och dessutom riktigt goda. Jag serverade dem med tomatsås och pasta. 

I had both eggplant and leftover cooked red lentils at home that I wanted to use, so then it hit me that maybe I can make patties of them. Yes, I made patties and they turned out really delicious. I served them with tomato sauce and pasta.


Small Eggplant-Lentil Patties

0,5 eggplant, diced
1 small red onion, chopped
1 garlic clove, chopped
1,5 dl cooked red lentils
0,5 dl grated cheese
about 4 tbsp almond meal
salt
pepper
basil
sambal oelek

Fry eggplant, onion, garlic in oil in a skillet for 5-7 minutes. Let cool. Mix eggplant-onion mixture with lentils, cheese, and almond meal with a hand mixer. Season to taste. If the mixture is too loose add some almond meal. Put in the fridge for 20 minutes. Heat the oven to 175 C. Form the mixture into small patties or into larger ones if you prefer them bigger, and place them on a greased parchment paper lined baking sheet. Bake in the oven for 15-20 minutes.


Små Aubergine-Linsbiffar

0,5 aubergine, tärnad
1 liten rödlök, hackad
1 vitlöksklyfta, hackad
1,5 dl kokta röda linser
0,5 dl riven ost
ca 4 msk mandelmjöl
salt
peppar
basilika
sambal oelek


Stek aubergine, lök, vitlök i olja i en stekpanna i 5-7 minuter. Låt svalna. Blanda aubergine-lökblandningen med linser, ost och mandelmjöl med en handmixer. Krydda efter smak. Om blandningen är för lös tillsätt lite mandelmjöl. Ställ i kylen i 20 minuter. Värm ugnen till 175 C. Forma blandningen till små biffar eller större om du så vill och lägg på en oljad bakplåtspappersklädd plåt. Grädda i ugnen i 15-20 minuter.
