As you already know I like vegetarian burgers and various beans. Now I am using red beans, which by the way are very good in baked goods, but are just as good to use in food dishes. And as always, you can spice according to your needs and taste.
Adzuki-Bovetebiffar
1 burk adzukibönor, sköljda
0,5 dl bovetegryn, okokta
1 vitlöksklyfta
0,5 lök
2 msk ströbröd
sambal oelek
1 msk jeera
2 tsk oregano
1 tsk koriander, mald
salt
peppar
Rosta bovetegryn i en stekpanna på medelvärme i några minuter tills de blir lite gyllene. Tillsätt sedan 2 dl vatten och koka upp. Täck med lock och minska värmen, låt sjuda i ca 15 minuter eller tills vätskan absorberats. Ta bort från värmen.
Lägg vitlök och lök i en matberedare och mixa fint. I en skål, blanda bovetegryn, bönor, kryddor och brödsmulor. Ta ungefär hälften av blandningen och mixa i matberedare tills du får lite mosig konsistens. Kombinera den mosiga halvan med resten av blandningen i skålen och forma sedan till biffar. På en lätt oljad stekpanna, stek biffarna på medelvärme i 4-5 minuter på båda sidor.
Adzuki-Buckwheat Patty
1 can adzuki beans, rinsed and drained
0,5 dl buckwheat groats, uncooked
1 garlic clove
0,5 onion
2 tbsp bread crumbs
sambal oelek
1 tbsp jeera
2 tsp oregano
1 tsp coriander, ground
salt
pepper
Toast the buckwheat groats in a skillet over medium heat for few minutes until they get a bit golden. Then add 2 dl water and boil. Cover and reduce heat, simmer for about 15 minutes or until liquid is absorbed. Remove from heat.
Add garlic and onion in a food processor and blend nicely. In a bowl, mix the buckwheat groats, beans, spices and bread crumbs. Take about half of the mixture and blend in food processor until you get a little mushy texture. Combine the mushy half with the remaining mixture in the bowl and shape into patties. On a lightly oiled skillet, fry the patties over medium heat for 4-5 minutes on each side.

This looks really healthy, its great to have a vegetarian version rather than meat. I think the sambal would go well with the herbs and spices.

DeleteThese look so tasty! I'm Eurasian, but I haven't experimented with many of those ingredients & I would never have thought to use azuki beans in savoury dishes (I love them in sweets). I've never had buckwheat outside of soba or gluten-free cereal, either. Definitely bookmarking this. :D
