Valnötsbröd med aprikos och tranbär

3 dl kallt vatten
2 tsk färsk jäst
5,5 dl vetemjöl
1 dl rågmjöl
1 msk honung
1 dl torkade tranbär
1 dl torkade aprikoser
1 dl valnötter

Blanda ut jästen i vattnet och tillsätt sedan alla ingredienserna. Rör kort tills allt blandats ordentligt. Låt degen vila i 30 minuter.
Doppa handen i vatten och ta sedan tag i degens kant med ena handen. Dra ut degen en aning och vik in mot mitten. Ta ett nytt tag, dra i degen och vik in mot mitten på nytt. Upprepa tills du kommit varvet runt. Det här momentet gör du totalt 3 gånger med 30 minuters mellanrum. När du sträckt degen tredje och sista gången låter du den jäsa i ungefär 1 timme.

Baka ut brödet. Strö rikligt med mjöl på en bakhandduk. Fäll försiktigt ut degen ur bunken och vik sedan in degens kanter mot mitten. Vänd degen så skarven hamnar nedåt. Vik ihop handduken till ett löst paket och låt jäsa ungefär 1 timme. Sätt ugnen på 250 i god tid innan degen jäst färdigt. Låt en plåt stå i mitten av ugnen och en form i nedre delen av ugnen.
Vänd över degen på en bit bakplåtspapper så skarven hamnar uppåt. Låt pappret med brödet glida in på den heta plåten via en skärbräda eller bricka och lägg några isbitar på den nedre plåten. Efter 15 minuter öppnar du luckan och vädrar lite. Fortsätt vädra ungefär var 5 minut tills brödet stått inne 30-35 minuter. Du kan när som helst sänka temperaturen om du tycker brödet börjar få lite väl mycket färg. Ta ut brödet och låt svalna på galler.

Walnut Bread with Apricot and Cranberry

3 dl cold water
2 tsp fresh yeast
5,5 dl flour
1 dl rye flour
1 tbsp honey
1 dl dried cranberries
1 dl dried apricots
1 dl walnuts

Mix the yeast in the water, then add all ingredients. Stir briefly until blended thoroughly. Let dough rest for 30 minutes.
Dip your hand in water and then grab the edge of dough with one hand. Pull the dough slightly and fold into the center. Take a new tag, pull the dough and fold into the center again. Repeat until you come all around the bread. This moment you will do a total of three times at 30 minute intervals. When you stretch the dough the third and last time you let it rise for about 1 hour.

Bake the bread. Sprinkle plenty of flour on a baking towel. Fold gently the dough from the bowl and then fold the dough edges toward the center. Turn the dough so the seam ends down. Fold the towel into a loose packet and let rise about 1 hour. Preheat the oven to 250 well before the dough has risen ready. Let a baking sheet stand in the middle of the oven and a baking form at the bottom of the oven.
Turn the dough onto a piece of parchment paper so the seam is facing upwards. Put the bread in the oven and throw a few ice cubes onto the baking form at the bottom. After 15 minutes, open the oven door, to let air in. Continue airing about every 5 minutes until the bread has been in the oven for 30-35 minutes. You can always lower the temperature if you think the bread starts to get a little too much color. Remove the bread and let cool on a rack.
