Silky muffins that melt in the mouth. These really have an incredibly smooth and soft texture, so good! If you want more strawberries in the muffin, I recommend chopping strawberries in pieces and adding to the batter. You will not be disappointed.
Jordgubbs-Ricottamuffins

40 g smör, smält
1 dl strösocker
1 litet ägg
80 g ricotta
1 dl vetemjöl
3/4 tsk bakpulver
jordgubbar, färska
Blanda smält smör och socker i en skål. Tillsätt ägget och blanda väl. Blanda i ricotta och sedan resterande ingredienser. Blanda tills allt är slät. Häll smeten i muffinsformar och tryck i varje muffins en liten jordgubb. Grädda i 175 C i ca 15 minuter. Låt svalna.

Mix melted butter and sugar in a bowl. Add the egg and mix well. Stir in ricotta and then the remaining ingredients. Mix until everything is smooth. Pour the batter into muffins cups and press a small strawberry in each. Bake at 175 C for about 15 minutes. Let cool.
