This is not the most beautiful cake, because it sinks in the middle after taking it out of the oven. But the taste is great. You can fill the depth with vanilla ice cream when the cake is still warm, giving a wonderfully tasty dessert. A cup of coffee with that and you have the perfect coffee break.
Speculoos Cake
0.5 dl speculoos spread
2 tbsp butter, softened
1 dl coconut sugar
1 egg
1 tsp vanilla
1.5 dl flour
0,5 tsp baking powder
pinch of salt
Preheat the oven to 175 C degrees. Line a 12 x 12 cm pan with parchment paper. Stir together the speculoos, butter, sugar and egg until smooth. Add the flour, baking powder and salt and stir to combine. Spread the mixture in the baking pan. Bake for 20-25 minutes. The middle of the cake will be wobbly.

2 msk smör, mjukt
1 dl kokossocker
1 ägg
1 tsk vanilj
1,5 dl mjöl
0,5 tsk bakpulver
