Today Runeberg's Day is celebrated in Finland. A few days ago I posted a blog post on Runeberg's cakes and you can find it here in case you want to bake delicious cakes to your afternoon coffee. I have also made a healthier version of the cake, in the form of a chia pudding. It's very good and is easy to make. If you want to be healthier you can make this chia pudding. Now have a nice Sunday, with or without cakes.
Runeberg's Chia Pudding
2 dl almond milk
2.5-3 tbsp chia seeds
0,5 tsp ground cardamom
6 drops of stevia almond
raspberry jam or raspberries
almond essence
Stir everything together in a jar and put in the fridge for a couple of hours or overnight. Stir before serving. Top with raspberries.
Runebergs Chiapudding
2 dl mandelmjölk
2.5-3 msk chiafrön
0,5 tsk malen kardemumma
6 droppar stevia mandel
hallonsylt eller hallon
