I have baked a lot with speculoos cookie butter, as you probably noticed, but it's so good. If you don't have the speculoos flavoured cookie butter, which is reminiscent of gingerbread, you can use another cookie butter or why not nutella or nut butters. These turned out very yummy, smooth and creamy with a lovely taste of chocolate and speculoos. Happy Saint Lucy's Day!
Speculoos Cookie Butter Brownies
85 g butter
100 g dark chocolate
2 eggs
1 dl coconut sugar
4 tbsp flour
0.5 tsp speculoos spice
1/8 tsp salt
2-3 tbsp speculoos cookie butter, soft
Preheat the oven to 175 C and line an 20 x 20 cm pan with baking paper.
Melt the butter and chocolate together in a pan until smooth. Set aside to cool. Then add eggs, sugar, flour, speculoos spice and salt. Pour the batter into the prepared pan. Drop spoonfuls of speculoos cookie butter on the batter. Bake for about 25-30 minutes. Chill completely before cutting into squares.
Speculoos Cookie Butter Brownies
85 g smör
100 g mörk choklad
2 ägg
1 dl kokossocker
4 msk vetemjöl
0,5 tsk speculooskrydda
1/8 tsk salt
2-3 msk speculoos cookie butter, mjukt
Värm ugnen till 175 C och klä en 20 x 20 cm bakform med bakplåtspapper.
Smält smör och choklad i en kastrull. Ställ åt sidan för att svalna. Blanda sedan i ägg, socker, mjöl, speculooskrydda och salt. Häll smeten i den förberedda formen. Klicka skedar av speculoos cookie butter på smeten. Grädda i ca 25-30 minuter. Låt svalna helt innan du skär i bitar.
