Jag gillar sötpotatis i alla former, ugnsrostade, pommes, i soppor, i bakverk... Att fylla dem med röror är också gott och den här gången valde jag att göra en röra på bönor, majs och kryddor. Så gott och enkelt. Det lönar sig att ugnsrosta flera potatisar samtidigt och använda de som blir över till t.ex. bakning. Månadens gröna har som tema rotfrukter och detta får bli mitt bidrag. I like sweet potatoes in all forms, roasted, as fries, in soups, in pastries... To fill them with a yummy mixture is also good and this time I chose to make a mixture of beans, corn and spices. Fyllda Sötpotatisar

4 st sötpotatisar (ca à 200g)

fyllning
3 dl blandade bönor
2 dl majs
3 msk creme fraiche / färskost / yoghurt
1 tsk spiskummin
1/4 tsk paprika
1/8-1/4 tsk vitlökspulver
färsk persilja
salt
svartpeppar

Skölj sötpotatisarna och stick små hål i dem med en gaffel eller kniv. Linda in dem enskilt i aluminiumfolie. Baka i 200 C ugn i ca 1 timme. 
Blanda ihop alla ingredienser till fyllningen och smaka av och tillsätt ev. mera kryddor.
Ta ut de bakade sötpotatisarna och låt dem svalna något. Skär upp dem på mitten med en kniv och tryck till på sidorna så att de öppnar sig. Fyll dem med fyllningen och servera.


Filled Sweet Potatoes

4 pcs sweet potatoes (about à 200g)

filling
3 dl mixed beans
2 dl corn
3 tbsp creme fraiche / cream cheese / yogurt
1 tsp ground cumin
1/4 tsp paprika
1/8-1/4 tsp garlic powder
fresh parsley
salt
black pepper

Wash the sweet potatoes and prick small holes in them with a fork or knife. Wrap them individually in aluminum foil. Bake in 200 ° C oven for about 1 hour.
Mix together all the ingredients for the filling and season to taste and add if necessary more spices.

Remove the baked sweet potatoes are and let them cool slightly. Cut them in half (not all the way through) with a knife and press on the sides so that they open up. Fill them with the filling and serve.
