Tortilla with yummy fillings is something I like a lot. And you can vary the filling to taste and what you have at home. This time I made enchiladas. I made a creamy and delicious filling using Boursin cuisine, but a flavored cream cheese could also be used. Now as I write this, I'm thinking of fried chanterelles together with cream cheese flavored with chanterelles. That would be a very good filling for tortilla. Have a nice day everyone!
Creamy Veggie Enchiladas
half of a small red onion, chopped
4 cubes frozen spinach
3 dl coarsely grated carrot and zucchini
1.5 dl brown lentils, cooked
1 dl Boursin cuisine garlic & fine herbs
salt
4 tortillas
tomato sauce
grated cheese
In a skillet fry the onion for a couple of minutes. Add the frozen spinach, carrot and zucchini and fry until the spinach is melted and most of the liquid is evaporated. Add in the boursin cuisine and season to taste. Fill the tortillas with the filling and put them in a greased oven-proof dish. Top with tomato sauce and grated cheese. Bake in 175 C oven for 20-30 minutes.
Krämig Grönsaksenchilada
hälften av en liten röd lök, hackad
4 kuber fryst spenat
3 dl grovt riven morot och zucchini
1,5 dl bruna linser, kokta
1 dl Boursin cuisine vitlök & fina örter
salt
4 tortillas
tomatsås
riven ost
I en stekpanna stek löken i ett par minuter. Tillsätt den frysta spenaten, morot och zucchini och stek tills spenaten smält och det mesta av vätskan har avdunstat. Lägg i boursin cuisine och smaka av. Fyll tortillas med fyllningen och lägg dem i en smord ugnssäker form. Toppa med tomatsås och riven ost. Grädda i 175 C ugn i 20-30 minuter.
