Litchifrukt kommer från Kina och är en stenfrukt. När vi bodde i Singapore fanns det litchifrukt till salu i nästan alla hörn :) Litchi har ett vitt fruktkött som omger en stor kärna. Den smakar mycket sött och har en blommig, rosaktig smak. Jag tycker att den nästan är för söt för att ätas naturell så därför valde jag att använda frukten i muffins. 

Lychee comes from China and is a stone fruit. When we lived in Singapore there was lychees for sale in almost every corner :) Lychee has a white pulp surrounding a large stone. It tastes very sweet and has a floral, perfume-like taste. I think it is almost too sweet to be eaten plain so I chose to use the fruit in muffins.



Lychee Cardamom Muffins, Gluten-free and Vegan
6 small muffins

2.5 flax eggs (mix 2.5 tbsp flaxseed meal with 5 tbsp water, and let sit for 15 minutes)
3 tbsp coconut oil, melted
0,5 dl coconut sugar
1 dl almond flour
2 tbsp coconut flour
1 tsp baking powder
0.5 tsp cardamom powder
1/4 tsp vanilla powder
4 lychees, peeled and chopped

Preheat the oven to 175 C. In a bowl, mix the flax-eggs with coconut oil. Then add the rest of the ingredients and stir. Use also the liquid that comes from the lychees when you chop them. Divide the batter into silicon muffin molds. Bake for 15 minutes. Remove from the oven and leave to cool completely. Store in the fridge.



Litchi Kardemummamuffins, Glutenfri och Vegan
6 st små muffins

2,5 linfrö-ägg  (blanda 2,5 msk linfrömjöl + 5 msk vatten, låt stå 15 min.) 
3 msk kokosolja, smält
0,5 dl kokossocker
1 dl mandelmjöl
2 msk kokosmjöl
1 tsk bakpulver
0.5 tsk kardemumma
1/4 tsk vaniljpulver
4 litchi, skalade och hackade

Värm ugnen till 175 C. I en skål, blanda linfrö-ägg med kokosolja. Tillsätt sedan resten av ingredienserna och rör om. Använd också vätskan som kommer från litchi när du hackar dem. Fördela smeten i silikonmuffinsformar. Grädda i 15 minuter. Ta ut ur ugnen och låt svalna helt. Förvara i kylskåp.
