Hur gott är det inte med en värmande chili som värmer din frusna kropp efter en dag ute i det kalla vädret. Denna maträtt är enkel att laga och du bestämmer själv hur stark du vill ha den. Servera med ris/quinoa och sallad.

Veggie Chili

1 röd lök, hackad
1 vitlöksklyfta, hackad
1 liten röd paprika, hackad
1 liten zucchini, hackad
några broccolibuketter, hackade
1 burk kikärtor
2 burkar tomatsås eller tärnad tomat
vatten
chili
salt
peppar
spiskummin
kanel

Stek lök och vitlök i kokosolja i en kastrull. Tillsätt paprika, zucchini och broccoli och stek ytterligare några minuter. Häll i kikärtor och tomatsås. Tillsätt vatten om såsen känns för tjock. Låt sjuda i 20 minuter. Krydda efter smak.



Veggie Chili

1 red onion, chopped
1 clove garlic, chopped
1 small red pepper, chopped
1 small zucchini, chopped
a few broccoli florets, chopped
1 can chickpeas
2 cans tomato sauce or diced tomatoes
water
chili
salt
pepper
ground cumin
cinnamon

Fry the onion and garlic in coconut oil in a saucepan. Add the pepper, zucchini and broccoli and cook another few minutes. Pour in the chickpeas and tomato sauce. Add water if the sauce seems too thick. Simmer for 20 minutes. Season to taste.
