Oven-roasted vegetables is one of the tastiest I know and are great to have with salad, as a filling for tortilla or sandwiches. I usually use peppers of various colors, zucchini and red onion. But other vegetables that are also good to roast in the oven are eggplant, mushrooms, and pumpkin. I cut the vegetables into pieces and drizzle them with oil and season with salt and pepper. Roast them at 175 C for about 30 minutes. Can be eaten both warm and cold.
