Ugnsrostade grönsaker och tortilla passar bra ihop. Jag valde att även rosta sötpotatis och de passade också bra att ha som fyllning i tortilla. Kan tyckas vara lite udda, men det funkar faktiskt. Jag rostade sötpotatis, aubergine, rödlök och paprika. Jag penslar grönsakerna med kokosolja och kryddar med salt och peppar. Chili är också gott att använda. Rosta dem i 200 C graders ugn för ca 30 minuter.
Oven-roasted vegetables and tortilla is good match. I chose to even roast potatoes and they were also suitable to have as a filling for tortilla. May seem a little odd, but it actually works. I roasted sweet potatoes, eggplant, red onion and yellow bell pepper. I brush the vegetables with coconut oil and season with salt and pepper. Chili is also good to use. Roast them in 200 C degree oven for about 30 minutes.
