Not perhaps the best looking dish, but I can tell you it's good. It had been nice with something green in it that would have made it prettier. Perhaps spinach or peas. I have a curry spice that is quite strong, so you have to taste the sauce and adjust it after your taste buds. You might want to have a more strong flavor of curry, then just increase the amount. My sauce is thick so you may well add more broth / cream.
Curry Tofu with Red Lentils
2-3 portions
1 red onion
1 tsp curry
400 g tofu, cut into cubes
1 dl dry red lentils
2 tbsp almond flour
2 dl vegetable broth
1-2 dl soy cream / heavy cream
salt
black pepper
Cut the onion and tofu into pieces. Heat the coconut oil in a large frying pan and fry the onion for 1-2 minutes. Add the curry and tofu and cook for another 2 minutes. Sprinkle on almond flour and pour in vegetable broth and lentils. Simmer for 15 minutes. Then add the cream. Simmer until the lentils are tender. Serve with cooked quinoa, potatoes or rice.
Curry Tofu med Röda Linser
2-3 portioner
1 rödlök
1 tsk curry
400 g tofu, tärningar
1 dl torkade röda linser
2 msk mandelmjöl
2 dl grönsaksbuljong
1-2 dl sojagrädde / grädde
salt
svartpeppar
Skär lök och tofu i bitar. Värm kokosolja i en stor stekpanna och fräs löken 1-2 minuter. Tillsätt curry och tofu och stek ytterligare 2 minuter. Strö över mandelmjöl och häll i grönsaksbuljong och linser. Låt sjuda i 15 minuter. Tillsätt sedan grädde. Låt sjuda tills linserna är mjuka. Servera med kokt quinoa, potatis eller ris.
