If there is something you miss in the way of food when you live abroad it is real licorice. But luckily we have kind parents and friends who send us licorice and other goodies every now and then. Licorice and lemon are a good combo in baked goodies and these two I have used in these gluten-free muffins. I chose to decorate with licorice melted in cream. Yum!
Lakrits-Citronmuffins
12 st mindre muffins
2 ägg
1 3/4 dl kokossocker
3 dl glutenfritt mjöl
1,5 tsk bakpulver
0,5 tsk vaniljextrakt
75 g smör, smält
1,5 tsk citroncurd
hårda lakrits/salmiakgodis, hackade i små bitar
Vispa ägg och socker fluffigt. Blanda sedan i resterande ingredienser. Fördela smeten i stadiga pappersmuffinsformar. Grädda i 200°C i 10 minuter. Låt svalna.
Licorice-Lemon Muffins
12 pcs
2 eggs
1 3/4 dl coconut sugar
3 dl gluten-free flour
1.5 tsp baking powder
0.5 tsp vanilla extract
75 g butter, melted
1.5 tsp lemon curd
hard licorice candies, chopped into small pieces
Beat eggs and sugar until fluffy. Then mix in the remaining ingredients. Divide batter into steady paper muffin cups. Bake at 200 ° C for 10 minutes. Allow to cool.
