Blueberry and lemon is a combination that fits perfectly together. I even added a little cardamom, but it will not take over the taste.
Blueberry Lemon Muffins
6 pcs
1.5 dl buckwheat flour (2/3 cup)
1 dl almond flour (1/2 cup)
1 dl coconut sugar (1/2 cup)
1 tsp baking powder
2 tsp blueberry powder, optional
0.5 tsp cardamom powder
1 dl almond milk (1/2 cup)
3/4 dl coconut oil (1/3 cup)
lemon juice and zest from half a lemon
1.5 dl blueberries (2/3 cup)
Mix all the dry ingredients in a bowl. Then add the wet
ingredients and blueberries and stir until combined. Pour the batter into muffin
cups and bake at 175 C degrees for about 15-20 minutes.
Blåbär-Citronmuffins
6 st
1,5 dl bovetemjöl
1 dl mandelmjöl
1 dl kokossocker
1 tsk bakpulver
2 tsk blåbärspulver, valbart
0,5 tsk kardemummapulver
1 dl mandelmjölk
3/4 dl kokosolja
citronsaft och skal från en halv citron
1,5 dl blåbär
Blanda alla de torra ingredienserna i en skål. Tillsätt
sedan de våta ingredienserna och blåbären och rör tills kombinerat. Häll smeten
i muffinsformar och grädda i 175 C grader i ca 15-20 minuter.
