I like to eat dates as a snack and to fill them with peanut butter makes them even tastier. If you have not yet tested this combo, then I think it is time you do it! I usually use tahini when I make hummus, but it's fine to use it in raw cakes, and as here in candy. I found the recipe for these goodies at The Kitchn, and I had all the ingredients at home, so it was only to mix everything together and wait a while before they were ready. I think they were very good, next time I will increase the amount of cardamom. One could well use other seasonings as well.
Tahini-Date Fudge
makes about 18 candies
2.5 dl pitted dates
1 dl tahini
2 tbsp coconut oil (room temperature)
0.5 tsp ground cardamom
1/8 tsp sea salt
Put the dates, tahini, coconut oil, and cardamom in a food
processor. Process until you have a smooth and thick paste.
Transfer the mixture to a baking dish lined with parchment
paper and use a spoon to press it down evenly. Freeze until firm. Remove from
the pan and cut into pieces. Store in the freezer.
Tahini-Dadelfudge
ca 18 st
2,5 dl urkärnade dadlar
1 dl tahini
2 msk kokosolja (rumstemperatur)
0,5 tsk mald kardemumma
1/8 tsk havssalt
Sätt dadlar, tahini, kokosolja, och kardemumma i en
matberedare. Mixa tills du har en slät och tjock blandning.
Överför blandningen till en bakform klädd med bakplåtspapper
och använd en sked för att trycka ner den jämnt. Ställ i frysen för att stelna.
Ta bort från formen och skär i bitar. Förvara bitarna i frysen.
