Det är redan tredje advent. Julen närmar sig med stormsteg. I år firar vi jul i Singapore. I tropikerna är det inte så lätt att komma i julstämning, men jag gör mitt bästa genom att spela julmusik, dricka glögg och äta pepparkakor. Dagens recept är inget undantag. 

It is already the third Sunday of Advent. Christmas is fast approaching. This year we celebrate Christmas in Singapore. In the tropics it is not so easy to get into the holiday spirit, but I do my best by playing Christmas music, drinking mulled wine and eating gingerbread. Today's recipe is no exception.


Gluten-free and Vegan Gingerbread Cake

2.5 flax eggs (mix 2.5 tbsp flaxseed meal with 5 tbsp water, and let sit for 15 minutes)
3 tbsp coconut oil, melted
0,5 tsp vanilla extract
1 tsp orange zest
2 tbsp fresh orange juice
0,5 dl coconut sugar
1 dl ground almonds
2 tbsp coconut flour
1 tbsp gingerbread spice
1 tsp baking powder

Preheat the oven to 160 C (fan assisted). Line a 12 cm round cake tin with parchment paper. In a bowl, mix the flax-eggs with coconut oil, vanilla, orange zest and juice. Then add the rest of the ingredients and stir.
Put the batter in the cake tin and press down using the back of a spoon to make sure it’s even. Bake for 20-30 minutes. Remove from the oven and leave to cool completely. Top the cake with frosting or icing sugar. Store in the fridge.


Glutenfri och Vegan Mjuk Pepparkakskaka

2,5 flax-ägg (blanda 2,5 msk linfrömjöl + 5 msk vatten, låt stå 15 min.)
3 msk kokosolja, smält
0,5 tsk vaniljextrakt
1 tsk apelsinskal
2 msk färsk apelsinjuice
0,5 dl kokossocker
1 dl mandelmjöl
2 msk kokosmjöl
1 msk peppakakskrydda
1 tsk bakpulver

Värm ugnen till 160 C (fläkt). Klä en 12 cm rund kakform med bakplåtspapper. I en skål, blanda flax-ägg med kokosolja, vanilj, apelsinskal och –juice. Blanda sedan i de torra ingredienserna. Häll smeten i kakformen och med baksidan av en sked se till att smeten är jämn. Grädda i 20-30 minuter. Ta ut ur ugnen och låt svalna helt. Toppa kakan med frosting eller florsocker. Förvara i kylskåp.
