Today is my birthday and had I been at home I would have done these pancakes. Hopefully Geneva serves good breakfast too. After our breakfast, we will take the train to Montreux and hike in the mountains. I'm really looking forward to it.
Rye Oat Pancakes
2 eggs
3 dl almond milk
2 dl mineral water, sparkling
2 dl rye flour
1 dl oat flour
2 tbsp coconut sugar
1 tsp vanilla extract
0,5-1 tsp salt
1 tbsp coconut oil
Whisk together eggs, milk and mineral water. Stir in the flours and coconut oil. Let the batter rest for 30 minutes. Heat a skillet with coconut oil and fry the pancakes on both sides until golden brown. Serve with jam, berries and ice cream.
Råg-Havreplättar
2 ägg
3 dl mandelmjölk
2 dl mineralvatten med kolsyra
2 dl rågmjöl
1 dl havremjöl
2 msk kokossocker
1 tsk vaniljextrakt
0,5-1 tsk salt
1 msk kokosolja
Vispa samman ägg, mjölk och mineralvatten. Blanda i mjölen och kokosolja. Låt smeten vila 30 minuter. Hetta upp en stekpanna med kokosolja och stek plättarna på båda sidor tills de gyllenbruna. Servera med sylt, bär och glass.
