I love hummus, and usually I do it on chickpeas. But it is also very good to mix in sundried tomatoes, as I have done here. But even spinach, basil... works. Hummus is good to have on bread, along with falafel and pita. With what do you usually eat hummus?
Sun Dried Tomato Hummus
1 can chickpeas, drained and rinsed
0,5 dl tahini
0,5 dl sundried tomatoes
3 tbsp lemon juice
2 tbsp olive oil
1 small clove garlic, minced
0,5 tsp ground cumin
1/4-0,5 tsp salt
In a food processor, combine all ingredients and process
until smooth and creamy. If the hummus consistency is too thick, add 1
tablespoon water until desired consistency. Keep in an airtight container for
up to one week in the refrigerator.
Soltorkade tomater Hummus
1 burk kikärtor, avrunna och sköljda
0,5 dl tahini
0,5 dl soltorkade tomater
3 msk citronsaft
2 msk olivolja
1 liten vitlöksklyfta, hackad
0,5 tsk malen spiskummin
1/4-0,5 tsk salt
I en matberedare, mixa alla ingredienser tills slät och
krämig. Om konsistensen är för tjock, tillsätt en matsked vatten tills önskad
konsistens. Förvara i en lufttät behållare i upp till en vecka i kylskåp.

DeleteJag får nog erkänna att jag är dålig på att äta hummus annat än med falafel. Blir det något över vid dessa tillfällen äter jag det gärna som dip till grönsaker.
