Vilken storm vi hade igår, både tåg och flygtrafiken var inställd. Idag blåser det ännu friskt och i morse haglade det.
Today, Finland's Independence day is celebrated. 6 December 1917 Finland declared its independence from Russia. To mark the occasion I'm serving a cake with a flavor of Christmas in the form of a gingerbread "tiger" cake. Tiger comes from the pattern that is formed from the light and the dark batters.

Pepparkakstigerkaka
200
g smör
2
dl socker
3
ägg
2
dl bovetemjöl
2
dl mandelmjöl
2
tsk bakpulver
2
tsk vaniljsocker
1
dl mjölk
2
msk kakaopulver
2
tsk pepparkakskrydda
Smörj
och mjöla en 1,8-liters ringform. Värm ugnen till 175 C.
Vispa
smör och socker till ett skum. Tillsätt äggen ett i taget, vispa väl.
Blanda
ihop alla torra ingredienser, förutom kakaopulvret och pepparkakskryddan. Rör
ner i ägg-sockersmeten växelvis med mjölken. Ta 1/3 av kaksmeten i en annan
bunke och blanda i kakaopulver och pepparkakskrydda.
Häll
hälften av den ljusa kaksmeten i botten på kakformen och häll på
choklad-pepparkakssmeten. Häll sedan resterande smet på. Nagga smeten med en
gaffel för att få ett swirl i kakan. Grädda kakan i ugnen ca 50-55 minuter. Låt
svalna.
Gingerbread "Tiger" Cake
200g
butter
2
dl sugar
3
eggs
2
dl buckwheat flour
2
dl almond flour
2
tsp baking powder
2
tsp vanilla
1
dl milk
2
tbsp cocoa powder
2
tsp gingerbread spice
Grease
and flour a 1.8-liter cake tin. Preheat oven to 175 C.
Beat
butter and sugar to a foam. Add the eggs one at a time, beating well.
Mix
all dry ingredients, except the cocoa powder and gingerbread spice. Stir into
the egg-sugar batter alternately with the milk. Take 1/3 of the cake batter in
a separate bowl and mix in cocoa powder and gingerbread spice.
Pour
half of the light cake batter into the bottom of the cake tin and pour over the
chocolate- gingerbread batter. Pour the remaining batter on. Prick the dough
with a fork for a swirl in the cake. Bake in the oven for about 50-55 minutes.
Allow to cool.
