Cookies made with only almond flour instead of wheat flour, makes them more fragile, but it works. Let them cool completely before serving, so they keep well together, and store them in the fridge. I used tagatose, but you can use use regular sugar as well. These are very fresh and good.
Cookies with Roasted Strawberry
strawberries
honey
pinch of salt
120 g butter
1 dl tagatose / sugar
2,5 dl almond meal
coconut
Preheat the oven to 175°C. Put the strawberries on a baking
sheet lined with parchment paper. Drizzle on some honey and sprinkle with a
little salt. Roast in theoven for 20 minutes. Let cool.
For the cookies, beat together butter and sugar in a bowl
until light and fluffy. Mix in the almond meal. Roll dough into balls. Place
dough balls in small muffin cups. Using your thumb make an indention in the
center of each cookie. Bake for 10-12 minutes. While the cookies are still
warm, re-form the dent in the center. Let the cookies cool completely. Fill the
cookies with strawberries and top with coconut.
Kakor med rostade jordgubbar
jordgubbar, delade
honung

120 g smör
1 dl tagatose / socker
2,5 dl mandelmjöl
kokos
Värm ugnen till 175 ° C. Sätt jordgubbarna på en plåt klädd
med bakplåtspapper. Ringla på lite honung och strö över lite salt. Rosta i
ugnen i 20 minuter. Låt svalna.
För kakorna, rör ihop smör och socker i en skål tills ljust
och fluffigt. Blanda i mandelmjöl. Rulla degen till bollar. Placera bollarna i
små muffinsformar. Med tummen gör en inbuktning i mitten av varje kaka. Grädda
i 10-12 minuter. Medan kakorna är fortfarande varma, tryck en grop i dem med
tummen igen, i fall de puffat upp under gräddningen. Låt kakorna svalna helt.
Fyll kakorna med jordgubbarna och strö på kokos.
