I had planned to bake a cake with zucchini and so I got the idea to add lingonberries. And I can tell you it was a successful experiment. So good with tart lingonberries in a moist cake with zucchini. Do you like baking with lingonberries?
Zucchini Lingonberry Cake
0.5 dl vegetable oil
1 dl sugar
1 large egg, room temperature
3/4 dl wheat flour
3/4 dl oat flour
0.5 tsp baking powder
1 tsp cinnamon
0.5 tsp vanilla essence
one pinch of salt
1 dl zucchini, grated
0.5 dl lingonberries
In a bowl stir together the oil, sugar and egg until well combined. Then add the flour, oat flour, baking powder, cinnamon, vanilla and salt until well combined. Lastly stir in the zucchini. Pour the batter into a geased and floured loaf pan and bake at 175°C for about 25 minutes.
Zucchini Lingonkaka
0,5 dl vegetabilisk olja
1 dl socker
1 stort ägg, rumstemperatur
3/4 dl vetemjöl
3/4 dl havremjöl
0,5 tsk bakpulver
1 tsk kanel
0,5 tsk vaniljessens
en nypa salt
1 dl zucchini, riven
0,5 dl lingon

Den ser verkligen saftig ut. Jag bakar oerhört sällan något med lingon...
