A risotto made from cauliflower rice! So incredibly good that I made it the following day as well. Mushrooms are so good to have in food and I also added spinach and good spices like turmeric and ginger.
Turmeric Cauliflower Otto
1 tbsp red onion, chopped
5 mushrooms, sliced
4 dl cauliflower rice
handful of fresh spinach
0.5 dl vegetarian broth
0.5 tsp turmeric powder
0.5 tsp ginger powder
salt
black pepper
parsley
Heat a skillet with some oil. Add the onion and mushrooms and fry fro a minute. Add the cauliflower rice, spinach and broth. Let cook for 5 minutes. Add spices and cook for another 5 minutes. Top with parsley.

1 msk rödlök, hackad
5 champinjoner, skivade
4 dl blomkålsris
handfull färsk spenat
0,5 dl vegetarisk buljong
0,5 tsk gurkmejapulver
0,5 tsk ingefärapulver
salt
svartpeppar
