These muffins are baked without eggs, instead I have used aquafaba (the liquid from a can of beans / chickpeas). Very easy to make are and you don't have to worry about that the muffins are going to taste like beans. Dare to try if you have not already.
Vegan Chocolate Chip Muffins
5 small muffins
1 1/4 dl almond flour
1 dl wheat flour
1 dl coconut sugar
1 tbsp cacao powder
3/4 tsp baking powder
3 tbsp chocolate chips
1 dl aquafaba, chilled
1 tbsp coconut oil, melted
Heat the oven to 175°C. Combine almond flour, wheat flour, sugar, cocoa, baking powder and chocolate chips in a bowl. Beat the chilled aquafaba with an electric beater until you reach soft peaks, about 1-2 minutes. Add the oil and beat for 30 seconds more. Add the dry ingredients and stir gently into the aquafaba, try not to overwork it in order to maintain the airiness. Divide the batter into 5 small muffin cups. Bake for about 15 minutes. Let them cool.
Vegan Chokladmuffins
5 små muffins
1 dl mandelmjöl
3/4 dl vetemjöl
1 dl kokossocker
1 msk kakaopulver
3/4 tsk bakpulver
3 msk chokladknappar
1 dl aquafaba, kyld
1 msk kokosolja, smält
Värm ugnen till 175 ° C. Kombinera mandelmjöl, vetemjöl, socker, kakao, bakpulver och chokladknappar i en skål. Vispa den kylda aquafaban med en elvisp tills du når mjuka toppar, ca 1-2 minuter. Tillsätt oljan och vispa i 30 sekunder till. Tillsätt de torra ingredienserna och rör försiktigt in i aquafaban, försök att inte övermixa. Fördela smeten i 5 små muffinsformar. Grädda i ca 15 minuter. Låt dem svalna.
