Regular pancakes are good and so are zucchini pancakes. I had a zucchini that looked sad, so I grated it roughly and used it in the pancake batter. Filling and yummy.

0,5 dl vetemjöl
0,5 dl havregryn
0,5 tsk salt
1/4 tsk vitlökspulver
2 tsk oregano
1 zucchini, ca 350 g
Blanda ägg, mjöl, havregryn, salt, vitlökspulver och oregano i en skål. Riv zucchinin grovt och blanda ner i äggsmeten. Värm en stekpanna med (kokos) olja och stek plättarna gyllenbruna på båda sidor.

0.5 dl oats
0.5 tsp salt
1/4 tsp garlic powder
2 tsp oregano
1 zucchini, about 350 g
Mix eggs, flour, oats, salt, garlic powder and oregano in a bowl. Grate the zucchini roughly and mix into the egg mixture. Heat a frying pan with (coconut) oil and fry the pancakes on both sides until golden brown.
