Moist muffins with almonds and berries. A good flavor combination, reminds a little of mazarin. I made small muffins so you can easily have two with your afternoon coffee :) Wish you all a nice day!
Bär-Mandelmuffins, glutenfria
9 st små
150 g mandelmassa
100 g smör, mjukt
0,5 dl kokossocker
2 ägg
2 dl mandelmjöl eller glutenfritt mjöl
1 tsk bakpulver
bär, jag hade frysta blåbär och hallon
Lägg mandelmassan och smöret i en skål och värm i mikron tills smöret är mjukt. Tillsätt socker och rör om tills allt är blandat. Tillsätt äggen ett i taget och rör smeten slät. Blanda i mandelmjöl och bakpulver. Fördela smeten i små silikonformar / muffinsformar och toppa med bär. Grädda i 175 C ca 10 minuter.
Berry Almond Muffins, gluten-free
9 pcs small
150 g almond paste
100 g butter, softened
0.5 dl coconut sugar
2 eggs
2 dl almond flour or gluten-free flour
1 tsp baking powder
berries, I had frozen blueberries and raspberries
Add the almond paste and butter in a bowl and heat in the microwave until the butter is soft. Add sugar and stir until well blended. Add the eggs one at a time and stir the batter smooth. Mix in almond flour and baking powder. Divide the batter in small silicone molds / muffin cups and top with berries. Bake at 175 C for about 10 minutes.
