There is something about enchiladas that is so good. I think it is the consistency of the dish that I like very much and of course, taste is also important :) It's soft, yet a little crunchy, this is probably a comfort food at its best. Do you have foods that feels extra good?
Ricotta Bell Pepper Enchiladas
250 g ricotta
0.5 dl grated parmesan
oven roasted bell peppers and onion
oregano
salt
pepper
garlic
wholewheat tortilla
tomato sauce
grated cheese
Mix all the ingredients with a hand blender and season to taste. Spread the mixture on four tortillas and roll up and place them in a baking dish that you put a bit of tomato sauce in the bottom of. Pour over tomato sauce and sprinkle with grated cheese. Bake in the oven for about 20 minutes. Serve with salad.

250 g ricotta
0,5 dl riven parmesan
ugnsrostad paprika och lök
oregano
salt
peppar
vitlök
fullkorns tortilla
tomatsås
