It's Monday again, the weeks go by so fast. The weather in Amsterdam has been grey and rainy, but warm. Today I'm sharing with you a recipe for crazy good muffins that are moist and have a taste of chocolate and peanut butter. I used coconut flour and for sweetener, I used Sukrin gold.
Gluten-Free Chocolate Marshmallow Peanut Butter Muffins
4 pcs
2 tbsp smooth peanut butter
1 tbsp coconut oil, melted
0.5 dl sukrin gold
1 egg
0.5 dl almond milk
2 tbsp coconut flour
1.5 tbsp unsweetened cocoa powder
1 tsp baking powder
pinch of vanilla powder
chocolate chips and mini marshmallows
In a bowl stir together peanut butter and coconut oil. Add the sugar and egg and stir. Then add the remaining ingredients and stir until smooth. Spoon the batter into 4 muffin cups and bake at 175 C degrees for about 12 minutes.
Gluten-fria Choklad Marshmallow Jordnötssmörmuffins
4 st
2 msk jordnötssmör, smooth
1 msk kokosolja, smält
0,5 dl sukrin gold
1 ägg
0,5 dl mandelmjölk
2 msk kokosmjöl
1,5 msk osötat kakaopulver
1 tsk bakpulver
nypa vaniljpulver
chokladbitar och mini marshmallows
I en skål rör ihop jordnötssmör och kokosolja. Tillsätt socker och ägg och rör om. Tillsätt sedan övriga ingredienser och rör om tills slät. Fördela smeten i 4 muffinsformar och grädda i 175 C grader i ca 12 minuter.
