I saw that Fanny had made gluten free pita and I also wanted to make them. Mine were quite flat so it was difficult to fill them with something but I ate them as ordinary bread. I like bread that are compact and not too airy, and these were exactly as I like bread to be.
Glutenfritt Tunnbröd

0,5 dl vatten
1 msk kokosolja
0,5 dl mandelmjöl
1 msk kokosmjöl
1/8 tsk salt
1/8 tsk bakpulver
Sätt ugnen på 175 C grader. Vispa ihop ägg, vatten och olja. Tillsätt de torra ingredienserna och blanda till en jämn smet. Det blir en tjock, rätt kladdig smet. Skeda ut smeten i två portioner på en bakplåtspappersklädd plåt och bre ut till två rundlar på ca 15 cm i diameter. Grädda i ca 15-18 minuter, tills kanterna blivit lätt gyllene.
Gluten-free Flatbread

0.5 dl water
1 tbsp coconut oil
0.5 dl almond flour
1 tbsp coconut flour
1/8 tsp salt
1/8 tsp baking powder
Preheat the oven to 175 C degrees. Whisk together egg, water and oil. Add the dry ingredients and mix until smooth. The batter is going to be thick and stick. Spoon out the mixture in two rounds on a baking sheet lined with parchment paper and spread them to about 15 cm in diameter. Bake for about 15-18 minutes, until the edges become light golden.
