Recently, I have been craving soups and soups are very good and warming. Warming is perhaps nothing you first think of when you live in Singapore. But believe me, you want to have hot food here also and especially when it's raining and windy outside, it is extra cozy with a good soup. Now I had sweet potatoes and carrots in the fridge, so I made a soup on them. If you want you can spice with cinnamon, because I think that both sweet potato and carrot goes well with the spice. Another tip is to mix in fresh grated ginger and coconut milk. The possibilities are endless so dare to try different flavors.
Sweet Potato-Carrot Soup
500 g sweet potatoes
500 g carrots
1 red onion
1 garlic clove
1 vegetable stock cube
8 dl water
salt
red curry paste, to taste
Peel and cut the vegetables. Put all the ingredients in a
pan and cook until the potatoes and carrots are soft. Mix with a hand blender.
Season to taste.
Sötpotatis-Morotssoppa
500 g sötpotatis
500 g morötter
1 rödlök
1 vitlöksklyfta
1 grönsaksbuljongtärning
8 dl vatten
salt
röd currypasta, efter smak
Skala och skär grönsakerna. Lägg alla ingredienser i en
kastrull och koka tills potatisen och morötterna är mjuka. Blanda med en
stavmixer. Smaka av.
