Colcannon, är en traditionell irländsk maträtt som huvudsakligen består av potatismos och kål. Jag hittade receptet i kokboken Easy Vegetarian. Detta är mitt bidrag till mars-månads kokboksutmaning: Potatis. Istället för purjolök, använde jag vanlig lök och använde mera vitkål än grönkål.

Colcannon is a traditional Irish dish mainly consisting of mashed potatoes and cabbage. I found this recipe in the Easy Vegetarian Cookbook. This is my contribution to the Cook Book Challenge for March: Potato. Instead of leek, I used yellow onion and more white cabbage than green.


Colcannon

225 g kål (grön/vit) strimlad
5 msk mjölk
3,5 dl potatis, tärnad
1 purjolök
nypa riven muskot
1 msk smör, smält
salt
peppar

Koka strimlad kål i en kastrull med kokande saltat vatten i 7-10 minuter. Häll bort vattnet och ställ åt sidan.
Under tiden i en separat kastrull, koka upp mjölken och lägg i potatis och purjolök. Sänk värmen och låt sjuda i 15-20 minuter, eller tills de är kokta igenom. Rör i den rivna muskoten och mosa potatis och purjolök tillsammans. Blanda i kålen. Häll smält smör över blandningen och servera genast.


Colcannon

225 g cabbage (green/white), shredded
5 tbsp milk
3,5 dl potato, diced
1 leek
pinch of grated nutmeg
1 tbsp butter, melted
salt
pepper

Cook the shredded cabbage in a pan of boiling salted water for 7-10 minutes. Drain thoroughly and set aside.
Meanwhile, in a separate pan, bring the milk to a boil and add potatoes and leek. Reduce the heat and simmer for 15-20 minutes, or until they are cooked through. Stir in the grated nutmeg and mash the potatoes and leek together. Add the drain cabbage to the mashed potato and leek mixture and mix well. Pour melted butter over the mixture and serve immediately.
