Kål är en utmärkt källa till vitamin C och betakaroten. Kål är låg i kalorier. I europeisk folkmedicin används kålblad för att behandla akut inflammation.

Kålpirog
Botten
2 dl fullkornsvetemjöl
1 dl grahamsmjöl
0,5 tsk salt
1 äpple (Granny Smith)
125 g margarin
(kallt vatten)

Fyllning
500 g kål
2 lök
2 msk margarin
2 msk honung
1 msk citronsaft
1 msk vetemjöl
0,5 tsk salt
0,5 tsk svartpeppar

Gör först degen. Blanda mjöl och salt i en bunke. Skala och riv äpplet. Tillsätt det rivna äpplet och margarinet i mjölblandningen. Rör runt tills allt blandat. Om degen är smulig, ha i lite vatten. Rulla degen i plastfilm och ställ i kylskåpet 1h.
Skala lök och skär i skivor. Strimla kålen. Sätt margarin i en kastrull och låt smälta. Ha I löken och kålen och rör runt med en släv. Sänk värmen och låt sjuda under lock ca 30 minuter, rör om då och då. När kålen är mjuk tillsätt honung, citronsaft, mjöl, salt och svartpeppar. Låt sjuda ytterligare en stund.

Sätt ugnen på 225 grader. Dela degen i två bitar och kavla bitarna till runda cirklar, ca 2-3 mm tjocka. Flytta dem på bakplåtspapper och fördela fyllningen på bottnarna. Lämna 2 cm tomt från kanterna. Vänd kanterna över fyllningen och pensla kanterna med ägg. Grädda i ugnen ca 15-20 minuter.


Cabbage Pasty
Crust
2 dl whole meal flour
1 dl gram flour
0,5 tsp salt
1 apple (Granny Smith)
125 g margarine
(cold water)

Filling
500 g cabbage
2 onion
2 tbsp margarine
2 tbsp honey
1 tbsp lemon juice
1 tbsp flour
0,5 tsp salt
0,5 tsp black pepper

First, make the dough. Mix flour and salt in a bowl. Peel and grate the apple. Add the grated apple and margarine into flour mixture. Stir until all mixed. If dough is crumbly, add a little water. Roll the dough in clingfilm and refrigerator for 1 hour.
Peel onions and cut into slices. Shred cabbage. Place margarine in a saucepan and let it melt. Put the onions and cabbage in the saucepan and stir with a slave. Reduce heat and simmer about 30 minutes, stirring occasionally. When the cabbage is soft, add honey, lemon juice, flour, salt and black pepper. Let simmer for a while.

Preheat the oven to 225 degrees. Divide the dough into two pieces and roll the pieces into round circles, about 2-3 mm thick. Move them on parchment paper and spread the filling on bottoms. Leave 2 cm empty from the edges. Turn the edges over the filling and brush edges with egg. Bake in oven for 15-20 minutes.
